Honey Varietal Guide
Honey varietal guide
A varietal honey reflects nectar gathered primarily from a particular floral source within a region and season.
What changes from harvest to harvest
Color, aroma, flavor, viscosity, and crystallization can naturally vary with weather, bloom conditions, handling, and time.
How to compare honey
Taste at room temperature. Notice aroma first, then sweetness, acidity, finish, mouthfeel, and any floral, woody, citrus, caramel, or herbal notes.
Crystallization
Crystallization is natural and does not mean honey has spoiled. Gentle warming can make crystallized honey more fluid.
Storage
Keep honey tightly closed at room temperature, away from excess heat and moisture.
