Tamarind-Date Triphala Chutney

This chutney blends soaked Medjool dates and tamarind concentrate with triphala powder, cumin, and ginger for a sweet, sour, and complex condiment. Ingredients

  • 8 soft Medjool dates, pitted
  • 1 tablespoon tamarind concentrate
  • 1/2 cup warm water, plus more as needed
  • 1/2 teaspoon NutriBotanix Triphala Powder

  • 1/4 teaspoon ground ginger
  • Pinch cayenne or chili powder, optional
  • 1/4 teaspoon salt
  • 1–2 teaspoons honey, only if needed

Method

  1. Soak the dates in warm water for 10 minutes.
  2. Transfer dates and soaking liquid to a blender with tamarind, cumin, ginger, optional chili, and salt.
  3. Blend until smooth.
  4. Add triphala and blend briefly again.
  5. Thin with a spoonful of water if necessary.
  6. Taste and add honey only if additional sweetness is needed.
  7. Refrigerate after preparation.

Triphala is naturally sour, bitter, and astringent on its own. Tamarind and dates build a sweet-sour base where those characteristics add complexity rather than needing to be masked, and cumin and ginger round out the spice profile.
