Gallberry Honey Balsamic Vinaigrette

Gallberry honey's deeper caramel-like character pairs naturally with balsamic vinegar. This vinaigrette is richer than a citrus dressing and works especially well with roasted vegetables, sturdy greens, nuts, and cheese.

Ingredients

  • 2 tablespoons Gallberry honey
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/3 cup extra-virgin olive oil
  • 1/4 teaspoon salt
  • Black pepper to taste

Method

Whisk honey, balsamic, mustard, salt, and pepper. Slowly whisk in olive oil until emulsified. Taste and adjust.

Yield: about 2/3 cup.
